This study was carried out to investigate the effect of steeping and germination conditions on growth and quality characteristics of naked oat cultivar ‘Choyang’. At first, the germinated oats were prepared by germination for 48 h at 25℃ after steeping for 4, 8, 16 h. Sprout length, dry yield, and β-glucan content were decreased with increasing steeping time.
