Current study investigated the physicochemical and digestible properties of green banana starch from Songkibab (SB) as available farmlands in southern parts of Korea were expanded due to the global warming issue. Raw starch was isolated using sodium bisulfide (0.3 M) solution from unripen green SB fruit, and the production yield was 4.0% after drying process. SB starch granule generally has the round shape with 12.9 - 35.7 μm ranges of diameters.
