Three winter squash cultivars (Boujang, Candy, and Dalcomi) were obtained from the Haenam-gun Agricultural Technology Center, and the physiochemical properties and digestibility of domestic sweet pumpkin starches were investigated. The granular shapes observed were spherical, polyhedral, and dome shape. All native pumpkin starches had B type crystallinity, which was changed to C type after heat-moisture treatment (HMT).
