In vitro human digestion models are widely used to determine the digestibility of bioactive substances and to perform drug delivery analyses. This study was performed to determine changes in bioactivities (antioxidant activities and antimicrobial activity) of various materials during in vitro human digestion models through some researches. First, we found that the degradation of quercetin and resveratrol was influenced by small intestine digestion. Before and after in vitro human digestion, the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activities of homogenized water- and ethanol-extracted grapes were higher than those of onion extracts. DPPH radical scavenging activity in both quercetin and resveratrol was decreased by in vitro digestion. Second, this study was used the updated in vitro human digestion by gut microbiota. This study was performed to determine changes in the antimicrobial activity of various antibiotics during in vitro human digestion by gut microbiota. The antibiotics showed the changes in concentration and antibiotic activities during digestion process. In particular, the antibiotics were unstable under conditions of stomach to large intestine digestion, and thus a decrease in antibiotic concentration could cause a reduction in antimicrobial activity during in vitro human digestion.
