In this study, response surface optimization was used to determine the optimal enzymatic pre-treatment conditions for softening mackerel (Scomber japonicus) fillets in terms of hardness and overall acceptance. Concentration of the enzyme solution and soaking time were set to independent variables. A mixture of Protamex and Neutrase was used as the enzyme solution to soak the mackerel fillets. Superheated steam was applied to the base heating method for roasted fish fillets. On the response surface optimization, the enzymatic treatment was optimized to 0.93% (w/v) and 18.88 h, respectively, showing the hardness (45,241.3 N/m<sup>2</sup>) and overall acceptance (8.19 ... 전체 초록 보기
