Lotus root is one of the crops containing potassium and a large amount of inorganic elements. In the present era, which focuses on instant foods due to westernization, health is important, and low-calorie foods and functional foods are becoming more preferred. The lotus root of water plants is produced in Asia and Australia, and is grown mainly in ponds. Lotus root is well known as food crops in Korea. Consumers want to eat Korean lotus root in Korea. Korean people are concerned about labeling of geographical origin of Korean lotus root when purchasing Korean lotus root. The price of Korean lotus root is 2.5 times higher than Chinese lotus root in Korea.
