Pork belly is a popular meat in Korea. Most of Korean people want to eat Korean pork belly. Therefore the price of Korean pork belly is two times higher in price than foreign pork belly in Korea. It is the reason that origin discrimination method of pork belly using NIRS(Near Infrared Spectroscopy) was developed in 2017.
Sample weight 2 kg was needed to discriminate origin of pork belly using NIRS. Lean meat of pork belly was separated, and freeze-dried to discriminate origin of Pokr belly using NIRS. And then freezed-dried sample 15 g was analysed using NIRS. Investigators of NAQS(National Agricultural Products Quality Management Service) branch office suggested that sample weight reduction from 2 kg to 0.6 kg be needed to improve usefulness of origin discrimination method of pork belly. It is why sample weight reduction method is needed.
The aim of this study is to develop sample weight reduction method that NIRS value of 5 g sample weight is similar to NIRS value of 15 g sample weight by comparing NIRS value between 5 g sample weight and 15 g sample weight using NIRS sample cover.
