Astaxanthin, a kind of xanthophyll carotenoid, has many biological functions, but its bioavailability is limited due to low absorption and hydrophobicity. In this study, we investigated the role of astaxanthin-loaded nanospheres (AN) in the prevention of apoptosis and autophagy in human intestinal epithelial Caco-2 cell induced by Gram-negative bacteria Vibrio vulnificus. Recombinant protein VvpE, produced by V. vulnificus induces the autophagic cell death in Caco-2 cells.
