The present study aimed to promote health through the development of muffins by mealworm Powder (Tenebrio molitor Lavare) and to be helpful in activating the local economy by enhancing the consumption of mealworm powder. The present study used the mealworm powder that was purchased at Koheung in Cheonnam province. Nutrition value of mealworm (Tenebrio molitor Lavre) was analyzed due to increasing demand of usage as a protein source for domestic animals and even further for human consumption. Low-calories food is growing up along with people’s interest to the healthy, and foodservice industry is developing and making functional food which helps to increase sale as a major strategy. Based on the result, the development for yogurt muffins with addition of mealworms sample products were performed along with the development for their processing techniques. Mealworm powder has the value of developing various products as a food because it has high health functionalities. The results of this study suggest that mealworm powder is a good ingredient for consumer acceptability and functionality of muffins.
