The factor which first decides the quality of coffee is selecting green coffee according to the understanding of flavor and characteristics of green coffee. These characteristics of green coffee will decide the method of roasting and extraction of coffee and will contribute to the tastes of a cup of coffee. However, the most coffee education is currently underway mainly for the job training and practical exercise of a barista and very little education on the green coffee is being done. Therefore, I would like to devise the model for the curriculum development of green coffee education in order that green coffee can be educated adequately as a stand-alone instructional unit. For this purpose, the current situation of green coffee education and awareness level of green coffee were investigated to the students of barista classes at the vocational training institutes. Further, the satisfaction research on the course composition of green coffee education, class progress and education materials,etc. has also been surveyed and analyzed. Based on the result thereof, this article is to devise and suggest the basic model to develop curriculum for green coffee education.
