Creatures in the earth maintain their constancy and circadian rhythm in biochemical, physiological and behavioral metabolic process. Part of oxygen in human bodies forms free radical generated from chemical reaction and when it is generated excessively, it may be reasons of all diseases. Therefore, this study aims to analyse components of dried and fermented Salicorinia herbacea to discover the antioxidative effect using DPPH and evaluate their efficacy as biologically active substance. As a result of the proximate analysis, 24.19% of crude fiber, 16.15% of crude ash were found in dried S. herbacea, and 67.36% of crude ash was found in fermented S. herbacea. For total phenol contents, dried S. herbacea has 19.28 ㎎/g of polyphenol and 61.80 ㎎/g of flavonoid while fermented S. herbacea has 19.28 ㎎/g of polyphenol, 70.95 ㎎/g of flavonoid. DPPH scavenging activities of dried S. herbacea were 10.48, 19.38, 31.08, 57.69, and 87.9% in 0.0625, 0.125, 0.25, 0.5, and 1 ㎎/㎖ of dried S. herbacea while DPPH scavenging activities of fermented S. herbacea were 23.61, 45.06, 70.75, 90.41, 91.04%. SC50 of dried S. herbacea was 4.28 ㎎/㎖, and SC50 of fermented S. herbacea was 1.49 ㎎/㎖. As a result, fermented S. herbacea had higher phenol contents and antioxidative effect than dried S. herbacea. Therefore, it was discovered that it can be applied for internal and external medicine and cosmetic materials as an antioxidant which can enhance curing ability of damaged tissues against free radicals.
