This study evaluated the importance of the property of selecting distinguishing customers at the bakery shop emerging as a new trend in the food service industry in recent years to present the result. First, the factors in the top selection properties were shown in order of product factors (0.276), hygiene factors (0.242), price factors (0.238), location factors (0.123) and advertisement factors (0.120).
Second, the importance of evaluation factors was the flavor in the product area, the convenient parking facilities in the location area and price adequacy in the price area. In other words, it was investigated that it would be necessary to make an effort to lower the customer-perceived price, store cleanliness was shown to be important in the hygiene area and food tasting events were highly considered in the advertising area. Last, the top factors of factors drawn as the most important detailed selection properties were shown in order of the flavor of products, store cleanliness, price adequacy, product freshness, employee cleanliness, open kitchen and product diversification.
When the implications necessary for the management of bakery shops are presented based on the results of this study, one of main reasons why customers visited a bakery shop could be said to be the excellent quality of products. This proved that the higher product quality, the higher customer satisfaction. In addition, it was identified that customer regarded product quality as an important selection property.
