The huge-wide 18inch pizza of New-york, cooked black bean-paste Chinese noodles of Incheon, and Korean style charcoal grilled beef of Osaka, all these exotic cuisines of seaport city are actually not exist in countries of their origin. Because exotic cuisines of seaport cities are records of reterritorialisation by the desire, which clearly shows and reconfirms the way of living, for reinvention of a new territory.
A plate of the common- exotic cuisine is not just a humble dish, but also a proof of pursuit for parity. It is memoir of cultural exchanges by the modern lives, who are not restricted by the sacredness, authority of Idea, nor the order of Oedipus. Philosophy and epistemology of Gilles Deleuze, who resist the western traditional philosophical Idealism and had affirmative stance to competence from the difference, present interesting spurs when discuss incidents of 20th century. Furthermore it is a study on birth of exotic cuisines. In this paper I will discuss on the progress how the exotic cuisines of seaport cities could be so popular with several samples by view of Gilles Deleuze.
