This study has dealt with a cooking books, 『Joseonmussangsinsikyorijebeop』, the material in the dialect from the Seoul area in the early 20th century. This study aims to analyze the vowel raising o(ㅗ)＞u(ㅜ), /?(ㅓ)/＞/?(ㅡ)/, /e(ㅔ)/＞/i(ㅣ)/and the merge of /?(ㅓ)/ and /?(ㅡ)/, /e(ㅔ)/ and /æ(ㅐ)/. ?(ㅓ)＞?(ㅡ) appears at ending‘-d?n(-던)’, it was written ‘-d?n(-든)’. Unlike another dialects, ?(ㅓ)＞?(ㅡ) didn’t occur at postposition and adnominal endings. e(ㅔ)＞i(ㅣ) was weak and impotent in the Seoul area. But, ?(ㅐ)＞e(ㅔ) was more powerful in the in the middle of words. It was difficult to differentiate between the /e(ㅔ)/ and /æ(ㅐ)/ in the middle of words.
