There is a radical disconnect that characterizes a lot of contemporary mainstream discussions about food. Serious opposition to the premise that eating meat is worse for the environment than not eating meat is not defensible, yet the connection persistently and consistently evades some of the finest minds in the field of food studies. The commitment to effecting real and quantifiable changes in the world that characterizes ecocriticism demands that we be willing to make connections and to follow through on them, regardless of how inconvenient this may be, and regardless of whether or not such actions are popular among our peers. There is more to ethics than convenience, and for ecocritical and environmental ethics, theorizing the disconnect is absolutely essential now.
