The purpose of this study was to investigate the effect of leek intake during exhaustive exercise on lipid metabolism and antioxidant enzyme activities in rats. Twenty one male Sprague-Dawley 4 weeks rats. Experimental groups were control group (A, n=7), leek intake group (B, n=7), leek intake with exhaustive exercise group (C, n=7). Exhaustive exercise was performed by a treadmill running (every 10 min speed increased gradually; 14~24 m/min, 0° grade) and 5% leek intake for 2 weeks. The results of this study are as follows; TC didn’t show change. B, C groups were significantly decreased in TG than A group. B group was significantly increased in HDL -C than A group. B group was significantly decreased in LDL-C than A group. B group was significantly decreased in MDA concentration than A, C group. B group was significantly increased in SOD activity than A group. CAT activity didn’t show change. In correlation result for blood lipid and antioxidant enzymes: TC and TG shows positive correlation with MDA and LDL-C shows positive correlation with SOD in control group. TC shows positive correlation with SOD and HDL-C shows positive correlation with CAT in leek intake group. TC shows positive correlation with MDA in leek intake with exhaustive exercise group. In conclusion, High intensity exhaustive exercise to increase oxidative stress but the natural antioxidant leek intake seems to have health promoting effect of retarding to oxidative stress by decreasing lipid peroxidation.
